It's the fun part of the week - recap time. I've had a great time feasting on your marvellous pasta offerings, be they soup, stir-fried, baked or steamed, made with vermicelli, rice noodles, somen, or fettuccine, decadent or nutritious, it has been a delight and I'm sure once you peruse the menu, there's something here that is bound to please and satisfy any cravings.

A simply elegant dish that is also very simple. Crab meat is mixed with lemon juice and zest, chilli, garlic, shredded watercress and a splash of olive oil to bring it all together.

Tigerfish offers up a perfect dish for those days when you need something fast but something that is still good for you. This soup uses somen noodles, baby spinach and wolfberries (gojiberries) with a touch of sesame oil to finish.
Squashy, Cheesy Pasta Bake

The name of the squash/pumpkin might be in doubt but there's no doubt that this is a dish that has you craving seconds. Pureed roasted squash is added to a base of cooked Italian sausages and mushrooms, it then gets a cheesy hit from cheddar, ricotta and parmesan. To top it off, it's bathed in a mix of eggs and baked.

Who doesn't love lasagna! Kait shows us how we can eat our lasagna now and still have some for later. She shows us how to make mini-loaf versions using a crock pot and how to prepare another for freezer storage.

Having been inspired by a tuna avocado salad, an unfortunate lack of avocado didn't stop PPN doyen, Ruth from making this rather delicious Tuna Pasta Salad. Joining farfalle pasta are canned tuna, black olives and spring onions and it's all drizzled with an olive oil and rice vinegar dressing.

Peach Noodle Kugel

I'm a novice when it comes to kugels so I'm fascinated by Chaya's fabulous gluten free kugel studded with pineapple pieces, peaches and dried cranberry. Eggs are beaten with the fruit juices and then stirred through the cooked noodles before being placed in ramekins. A mix of cinnamon and sugar is sprinkle over the top and then baked.
Trofie with Potato, Peas and Pesto
I play around with a Ligurian speciality, adding purple congo potatoes and green peas to the mix.

Chicken Pasta Salad

A healthy Chicken Pasta Salad that we'd be happy to see in our lunchbox. Chicken breasts have been marinated in a flavoursome mix of rosemary, garlic and Dijon mustard and then baked. They are then combined with whole wheat pasta, artichokes, peppers, sun-dried tomatoes and dill and dressed in a mix of mayonnaise and mustard.

Comfort food never looked so good. Little Inbox uses Flour Vermicelli which are very fragile, thin, white noodles made from rice flour and for the time pressed cook in mere seconds. They have been combined with free-range chicken, Asian greens and hard boiled eggs.
My Experiments & Food
While preparing to pack up for a vacation, the job of cleaning out the fridge results in this classic creation of Minestrone. Containing kidney beans, potato, tomatoes, onions, garlic, pasta and an assortment of veggies on hand, it's wholesome and delicious.
