Cheese Twists

Another no fuss snack that works well as a nibble with drinks or for dunking with dips. Add different flavourings or spices to suit your mood.

Cheese Twists


150g plain flour
60g grated cheese
60g diced butter
1 egg yolk
lemon juice


Preheat oven to 180°C/350°F.

In a processor add flour, cheese and freshly ground salt and pepper. Pulse briefly to combine. Add diced butter and pulse again until it resembles breadcrumbs.

Mix the yolk with 1 tablespoon of lemon juice and add to processor. Pulse until the dough begins to amalgamate (add a little more lemon juice if the mixture seems too dry).

Turn out and knead lightly then roll into a rough rectangle. Cut into finger width strips, then cut this into 10cm lengths. Twist into spirals and place on a baking sheet.

Bake until golden about 10-15 minutes. Cool on a wire rack.

Some ideas for alternatives:
Some ideas for additional flavourings (add at the initial stage with the flour): mustard, curry powder, fennel seeds, fresh rosemary

If you don't feel like making twists, just take small balls of dough and roll into tiny batons - roll in sesame seeds and bake as per the recipe.

  4. Hi Delia - I just used a cheddar for this, you could use a swiss or gruyere, just use your favourite.
