Weekend Herb Blogging #227 - Recap


I hope everyone had a wonderful Easter break and that there's still some room for a few more dishes courtesy of this weeks recap.

As usual, I've sorted the entries by main ingredient. If I've left anyone out or the details are incorrect, please let me know and I'll fix it straight away.



Almond/Peanut

You're going to have a very Happy Easter with these delicious cookies from Cinzia. Made without any leavening agent, the dough contains ground almonds and peanuts.


Asparagus

Grilled Flatbread with Chili-Garlic Asparagus and Ricotta

It's not asparagus season here but Yasmeen's recipe has me wishing it was.  She grills her home made flatbread and then tops it with a mix of sautéed onions, garlic, chilli and asparagus, crumbled ricotta and soft herbs.


Barley/Carrot/Zucchini

Spiced Carrot and Zucchini Barley

You can use a rice cooker to cook the barley in this dish or cook it conventionally. The cooked barley is added to sauté of carrots and zucchini that has been spiced with a heavenly mix of cumin, paprika and cinnamon. It's a great way to incorporate an underused grain.


Beetroot/Potato

Simona has come up with a clever way to create pink mashed potatoes - she adds the cooking juices from beetroots!


Garlic

It's these in between seasons where you usually find yourself succumbing to those niggling colds and sore throats so it's great timing for Winnie to share her favourite sore throat remedy. You can store this garlic honey in the fridge so it's ready any time you start feeling those cold or flu symptoms coming on.


Peanuts

TS and JS have brought along a dish that is sure to quell any remaining feelings of #momofukurage. Inside these fluffy white buns you'll find braised pork belly, chopped pickled mustard greens, ground sugared peanuts, cilantro and spicy Sriracha sauce.


Pistachio

Fresh Fig and Pistachio Galette


Fresh Pistachios are in season and I've combined the with another seasonal fruit, Figs to make a Galette.


Raisins

Teff

Teff flour is made from the seed of lovegrass and is used in making injera, the Ethiopian flatbread. Laura has found a sweet and delicious way of incorporating this fascinating ingredient into these delectable Double Chocolate Chip Mint Cookies.


Walnuts

A rediscovered cookbook leads Sra to create this Mediterranean Cucumber Salad - a chilled mix of cucumber, raisins, onions, walnuts and yoghurt. If you buy your walnuts still in the shell, Sra has a novel way of opening them.
