This cake is the result of wanting something sweet and using whatever was left in the fridge at the time. The base of the cake is a very simple to make butter cake and the topping is a mix of fruit that have been poached in a light syrup - a blend of apples, pears and assorted berries.
Butter Cake with Poached Fruits
250g plain flour
2 teaspoons baking powder
225g caster sugar
125g melted butter, cooled
2 eggs, lightly beaten
Preheat oven to 180°C/350°F. Use a baking tin with a removable base to make it easier to un-mould the cake.
Sift the plain flour with baking powder into a bowl - mix the caster sugar through the flour. Lightly beat the eggs with the milk. Add this and the cooled butter and stir through until well amalgamated.
Pour into a lined baking tin and then top with the poached fruits.
Bake until cooked through and golden - about 45 minutes. If you feel it is browning too quickly then turn the heat down.
Cool slightly before removing. Serve warm or cold.
2 apples, peeled and cut into chunks
1 pear, peeled and cut into chunks
100g mixed berries, if frozen use straight from the freezer
In a small pan place the fruit and a little water and sugar (use a 2:1 proportion of water:sugar). Cook over a medium heat and when the fruit has softened slightly add the berries. Continue cooking until the syrup thickens and the fruit are soft.
Cool this mix before using it.
