Cheesy Spiral Scones

While browsing through the one of the newer cookbooks called "Bake It" I kept returning to one page. This is a really nice afternoon type snack. It's pretty easy to make, delightfully rustic in appearance and wonderfully cheesy. If you'd like a more "adult" taste, try adding blue cheese.


Cheesy Spiral Scones

250g plain flour, sifted
1 tablespoon baking powder
1/8 teaspoon cayenne pepper
30g butter, softened and diced
3/4 cup milk
40g grated Parmesan
40g grated Jarlesberg
40g Marinated Fetta
Freshly ground white pepper

Preheat oven to 180°C/350°F.

Place the flour, baking powder, cayenne and butter in the bowl of a food processor.
Pulse until the mixture resembles breadcrumbs then add the milk, a quarter at a time until it forms a ball.

Turn out onto a floured bench and knead lightly - only until smooth.

Roll out to form a rectangle about 25cmx30cm in size.


Sprinkle over the various cheeses, grind over with white pepper then starting from the long side, roll the dough into a cylinder. Cut the dough into 12 even sized pieces.



Place on a baking sheet, cut side down, leaving space for the scones to expand and cook until golden, about 15 minutes. Cool on a wire rack and serve warm.

  2. Thanks Meena - this recipe is extremely adaptable to whatever you have in the fridge and pantry - olives, herbs, sun-dried tomatoes, anchovies.

  3. IT's funny that I'm looking at scones again, after having baked approximately 400 scones today!
    But these cheesy ones sounds really yummy. I'm sure a blue cheese version would be great.

  4. looks good. looks like something I cheated on and used a pre-made frozen puff pastry but layered it with spinach, herbs and goat cheese.
