Creamy Broccoli Soup

Poor Broccoli - often disregarded and thoughts of it are met with a scowl, it really does deserve to be treated better then that. This soup should turn even the most avowed broccoli hater into it's cheerleader. Try it, you won't be dissapointed.

Creamy Broccoli Soup

2 cups stock (chicken or vegetable, choice is yours)
2 medium sized potatoes, peeled and chopped into cubes
175g broccoli, cut into small pieces
½ cup cream
salt and freshly ground white pepper
50g broccoli, extra for decoration, chopped into small pieces and par boiled

In a pan heat up the stock, then add the potatoes and broccoli.

Cook over medium heat, covered, until the vegetables are soft.

Blend until smooth.

Add the cream, season with salt and pepper, add the par-cooked broccoli and gently reheat (don't let it boil once you've added the cream).

Spoon into bowls and serve with crusty bread.

  1. I have made something similar, from Michael Chiarello. I love broccoli soup. This could get any child to eat their broccoli. My son loves broccoli. I may try this on him.

    Your picture is beautiful too.

  2. Thanks Risa! Broccoli does have a lovely sweet taste when cooked this way - and it's such a quick and easy soup to make.

WOW, i made this to your recipe but with more broccoli, and I don't cook soups that often but WOW IT WAS AMAZING!!! The best soup I have ever made, but I would prefer to serve it with cream on the side because the soup is such a nice colour without, and it's quite rich anyway..

  6. Thanks Ruby - so glad that you enjoyed the soup - I treat the recipes as guides, especially savoury ones and they should be modified to suit your own tastes which I'm very happy to know that you have.

  7. I -just- made this, in fact I'm eating it as I type. My broccoli was past its prime, but it still makes a great soup.. I added a touch of nutmeg and a hint of cumin, and added a spring onion to the vegetable mix.

  9. I love this soup and make it regularly throughout winter, it's so comforting. An alteration I make is to omit the cream and add a decent handful of grated cheese - really strong, well-matured cheddar is perfect.

By the way, your photo has been lifted by a diet fraud named Kimmer on her Kimkinsdiet blogspot blog. If your photo is original you may want to ask her to take it down.
