Anchovy Sticks

Looking for something to nibble on with drinks? Something that's quick and easy to prepare but looks like something you slaved hours on?

Then this is a perfect recipe for you.

Anchovy Sticks

1 sheet pre-made frozen puff pastry
good quality anchovies in olive oil

Take one sheet out of the freezer and let it soften on a board. Once pliable, fold loosely in half to create a "crease" in the pastry. Lay two lines of anchovies slightly apart on one half of the pastry - you want to lay the anchovies down the longest side. With a small brush lightly oil the pastry using the anchovy oil - this will help the pastry stick together. Fold the pastry back over and encase. Press down and around the anchovy lines, making sure the pastry starts to stick.

You can put this in the freezer for 15 minutes to make it easier to cut but it's not necessary.

Slice into thin strips (about 5mm wide) along the shortest side. Place these strips cut side down on a baking tray.

Bake in a preheated oven (180°C/350°F) until golden and crispy for about 10 minutes.

These are good straight from the oven or cold and makes a welcome change to packets of chips and nuts.

  3. You won't believe this, but my mother just sent me a book called "A Christmas Carol Cookbook" (Sarah Kay, et al, 1993) and it's got a recipe almost exactly like this. Puff pastry, brush with egg yolk mixed with water, anchovies, cover with more pastry, and bake. They call it "Ali Baba's Anchovy Sticks". I guess if I've seen it in 2 different places, I'll have to try it.

  4. Hi Vicki - I think the recipe even goes back further than that - Masterchef Michel Roux calls them anchovy straws. Whatever the name, they are super easy to make and completely addictive!
